Eggless waffle


Ingredients:
Maida/Wheat : 1 cup
Melted butter :  2tsps
Milk : 1 cup
Baking powder : 1tsp
Baking soda : 1/2 tsp
Lemon Juice : 1tsp
Sugar : 2 tsp
Salt : 1/4 tsp

Method:
Add the dry ingredients flour, baking powder, baking soda, sugar, salt and mix them thoroughly.
Add melted butter, lemon juice and add milk slowly whisking the batter until well incorporated into a smooth mix.
Heat the waffle maker as per instructions and brush the insides with butter/oil/spray
Pour the batter evenly taking care not to make it overflow from the sides.
Close the lid and cook as per instructions. Takes about 3 mins usually. Do no open in between.
Open and gently slide out the waffles and enjoy with the topping of your choice. Whipped cream, nuttela, fruits or simply with honey or maples syrup.

Note: Crispy on the outside and soft from inside means it is done perfectly.

Beans parupu usili

Beans parupu usili

1. Soak equal proportions of toor dal and channa dal (1/2 cup each) for 2 hours with a pinch of turmeric.
2. Add red chillies (4-5), asafoetida, and salt to the soaked dals and grind into a coarse paste with less water (note: getti chutney consistency).
3. Roll it into balls and place it in idli moulds.
4.Meanwhile cut green beans into small pieces. Wash and add little water to it in a vessel.
5. Steam the green beans and the idli plate with the dal mixture for 10 mins in cooker. Let it cool down.
6. Break the idli shaped dal moulds into small pieces by hand and put them in a blender. Use whip option or lowest setting and turn it on and off quickly for 3-4 times. This will break it into fine crumbles.
7. Heat some oil in a pan and add mustard, urad dal, curry leaves and green chillies(optional, if the mixture is not spicy enough).
8. Strain the steamed green beans and add to the pan and fry. Add some salt and turmeric.
9. Blend in the crumbled dal mixture to pan and mix well along with green beans.
10. Taste and Enjoy!




Banana Dates cake


Ingredients
All purpose flour - 2 cups (approx cup capacity - 200ml)
Ripe Banana - 1
Pitted Dates - handful
Chopped Almonds - 10 (as needed)
Vanilla essence - 1 tsp
Baking powder - 1 tsp
Baking soda - 1/2 tsp
lemon juice - 1/s tsp
powdered sugar - 1 cup
Oil - about 1/2 cup
Yoghurt - about 1/2 cup


Method
Preheat the oven for 15mins
Sift the all purpose flour, add in the baking powder and baking soda. Mix well and keep aside
Mash the ripe banana with a fork and add in the chopped pitted dates. To this add the vanilla essence and keep aside
In a bowl add the oil, add the powered sugar and beat well with a whisk. Add in the banana mix and keep mixing.
Now add the dry mix to the wet mix slowly, keep adding curd little by little until all the flour is corporated and it becomes a nice batter
If the batter is too thick add 1-2tsp milk.
Add the lemon juice to this.
Add the chopped nuts and give a good stir.

Prepare the cake dish by applying butter/oil and dust it with flour. Tile and tap to remove excess flour
Pour the prepared batter into the dish and place in the oven at 180c for 40mins
Keep checking every 5 mins after 30 mins.
If the cake is browning on the top cover with foil and continue
Remove cake when tooth prick inserted comes out clean

Let the cake cool on a rack for 5-10 mins
Once cooled place a plate on top and invert it. It would help to use a knife around the the cake before tilting.
